I had every intention of cooking up a something warm in the kitchen tonight. However I didn't have some of the necessary ingredients, and I just couldn't bring myself to go to the grocery. So no butternut squash soup.
Instead I pieced together some odds and ends in my fridge and made this Mediterranean inspired salad.
Sadly it was the most creative thing I did today :(
