When I was trying to come up with something to eat the other night, I found one of these massive sweet potatoes in my pantry. I'm not sure what dad has done to grow them so big but they are HUGE. And just one of these (or part of one) is enough to make up a batch of yummy Sweet Potato Quesadillas.
